All natural, no bake protein bars

Have you been looking for some good bars lately? 🙂

In recent weeks, I’ve been on a quest for some all natural protein bars and have come up empty handed. Apparently they do not exist on store shelves! They’re all either super processed or have artificial sweeteners! There are several great all natural bars that aren’t specifically protein focused (like these! Love these!), but I was looking for something that would help me feel energized and add to my protein intake!

Since I couldn’t find anything all natural, I decided I’d just make some myself!

I looked at several recipes online for inspo and ended up kinda creating one that tasted pretty good! So here it is…

the bars

1 cup raw almonds

1 cup old fashioned oats

2 tablespoons coconut oil

1/3 cup nut butter (I used peanut butter)

1 tablespoon honey

2 packs of stevia

(edit since original posting: I recently added 1/4 cup PB2 and 1 more tablespoon of coconut oil and this was a GREAT addition!)

chocolate drizzle

1 teaspoon coconut oil

3 heaping tablespoons dark chocolate chips

Put all of the bar ingredients into a food processor and pulse until everything starts sticking together.

Scrape the mixture into an 8×8 dish and press firmly and evenly into the dish.

Put the chocolate chips and the teaspoon of coconut oil in a microwave safe dish and microwave for about 45 seconds, or until the chocolate is melted and mixes together easily with the oil. Then drizzle the mixture in thin ribbons onto the bars.

Refrigerate for about 30 minutes, or until the chocolate has hardened. Cut into 8 or 10 bars.

ENJOY!

And store the rest in an airtight container in the fridge 🙂

I’ve seriously been enjoing these. The taste and texture is pretty similar to my former favorite ThinkThin bars, but you don’t have that weird artificial sweetener aftertaste that ThinkThin bars give. These bad boys have served as breakfast on days when I was running short on time and as snacks when I just needed a little pick-me-up!

Fun fact: I used to work out with this personal trainer (What up, Dan!) who was also my nutrition coach. He told me that, if there is any one food he could confidently tell me to snack on throughout the day every day, it would be raw almonds. So! That’s why I try to use raw almonds whenever I can 🙂 As Price says, “they taste like what I would imagine tree bark to taste like.” And I can kiiiinda see where he’s coming from… So finding recipes where you can make them taste a little better is always a win in my book! 🙂

    Yum! I live on raw almonds as a snack. I definitely want to give these a try!

      I hope you like them!!! If you have any other tricks for incorporating raw almonds into recipes, I’m all ears! I can only snack on them plain for like 2 days at a time, then I get burned out! Would love to hear your tips since you’re such a fit mommy inspiration!! 🙂

    I just made my first batch! I don’t have any PB powder but they are so delicious anyways… I’ll have to be careful not to eat too many at once!
