Blondies

For a belated Mother’s Day celebration, we had the family over to our house for dinner one night last week. I was trying to think of a dessert that reminded me of my mama when it came upon me: BLONDE BROWNIES! (a.k.a. Blondies)

My mama used to bake these all the time when we were younger and I have nothing but wonderful memories tied to them! I used to LOVE when mama would bake something because it meant we got to lick the beaters (which was always the highlight of any day!)

I found this blonde brownie recipe that I modified a bit, and it actually turned out to be pretty fantastic! (Not because of my doing, though. This was just a great – and easy! – recipe.)

2⁄3 cup butter, melted
2 cups brown sugar (packed)
2 large eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons vanilla
1/2 cup chocolate chips

1. Preheat oven to 350°F.

2. Melt butter.

3. Add to sugar in bowl set aside.

4. Beat eggs and add to sugar & butter.

5. Mix together flour, baking soda,& salt, then add to butter/sugar mixture. Add vanilla.

6. Spread into a 9 x 9 pan.

7. Sprinkle chocolate chips on top of batter.

8. Bake at 350° for about 40 minutes.

9. Remove and let cool. The middle will sink down some and you’ll be left with a pan of super gooey, incredibly delicious blondies!

(The original recipe called for margarine, sifting of all the white ingredients, and use of a 9 x 13 pan, baked for 25-30 minutes. Above are my modifications. I’m sure the original recipe is legit, too!)

One of my favorite grocery store discoveries as of late is this Edy’s Peanut Butter Pie Custard. It has changed my life. If you like ice cream, this is a must try!!!

      If you like brownies and chocolate chip cookies, then you will love! This is like a mix between the two! 🙂
