As different as I am from all of these folks, I do have to agree with all of them that breakfast is pretty bangin’. I love me some breakfast food, no matter what time of day it is! Which is why you might find me at 9 in the morning or 3 in the afternoon making this particular breakfast recipe… It’s safe to say that over the past couple of weeks I’ve been pretty obsessed!

It fits right in with health month and it’s super tasty! Ladies and gentlemen… I present to you…

Almond banana pancakes!

Healthy Almond Banana Pancakes with Raspberry topping // THE HIVE

Besides being just really healthy, this recipe is VERY simple!

>> WHAT YOU’LL NEED FOR PANCAKES <<

1 ripe banana
1/3 cup almond flour or ground almonds
2 eggs
*that’s it!*
mini chocolate chips are optional but preferred

Put your skillet on the stove and start getting it hot. I prefer using a cast iron skillet.

Smash the banana with a fork in a bowl then whip in the eggs and almond. (I actually once used 1/3 cup instant oatmeal when I didn’t have almonds and it was awesome!)

Grease the skillet. I use Smart Balance cooking spray.

Pour your mixture into the skillet – turn the temp to medium/low – in pancake-sized pours. Sprinkle some chocolate chips on top if you wish! (I almost always wish for a little extra dark chocolate! Don’t you?!)

Once you start seeing the batter bubble up a little on the edges, it’s time to flip.

I usually get 5 or 6 pancakes out of this recipe! To keep with the healthier trend, I have been using a drizzle of honey instead of syrup. I’ve also been making a really easy raspberry fruit topping using thawed out frozen raspberries (so you get all that good juice with the fruit once they melt) mixed with cinnamon and honey to my taste.
