Hey everybody!
I hope everyone is having a good week so far! If you’re not, hopefully this will help it get a little better! This cookie recipe is super simple and super delicious if you’re a butterscotch and pecan fan! It’s just a chocolate chip cookie recipe, but instead of chocolate chips, I used butterscotch chips! And instead of opting not to add nuts like I usually do, I went with pecans!
>> WHAT YOU’LL NEED <<
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 large eggs
2 cups butterscotch chips
1 cup chopped pecans

Preheat the oven to 375.
Combine flour, baking soda, and salt in a small bowl. Beat butter, granulated sugar, brown sugar, and vanilla extract in a large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in butterscotch chips and pecans. Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 8 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes, then move to wire racks to cool completely.
Makes about 5 dozen cookies.

For some reason, the butterscotch and pecans make these cookies feel/taste/look extra fallish to me! And who doesn’t love fall?! If you make these any time soon, I’d love to know what you think! 🙂
