Ok I have a recipe for y’all today!

I’ll admit, it’s a little weird… It’s for Banana Breakfast Cake. It’s like a hybrid between banana bread and a blondie but more cakey… But it’s super healthy! (Except for that little bit of brown sugar… But all the other healthy stuff totally overrides that!)

I sort of concocted this because I was having a sweets craving one night but didn’t want to give in to candy or ice cream. I’ve made it multiple times since that first round because it’s just so dang good! It isn’t the prettiest looking thing when you take it out of the oven, but who cares… It tastes great and it’s loaded with lots of good stuff! And Wilson loves it just as much as I do!

Cake For Breakfast... Healthy banana cake that you can dive into without feeling any guilt!

Here’s what you need:

1/2 cup almond flour
1/2 cup + 2 Tbl oat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup coconut oil
1/4 cup + 2 Tbl packed brown sugar
1/4 cup + 2 Tbl Stevia in the raw
1/2 tsp vanilla extract
2 eggs
1 banana, smashed

Preheat oven to 375.

Mix all ingredients together in a mixing bowl then transfer to a 9″ x 9″ square pan.

Bake 25 to 28 minutes.

Remove from oven, allow to cool, and enjoy!
