Seasonal Salad

Looking for a good salad recipe to whip up quickly and take with you to Thanksgiving tomorrow?!

This one might be just the thing!

It is Thanksgiving-y (because of the cranberries and apples), it looks pretty, and it tastes great!

>> WHAT YOU’LL NEED <<
(serves about 10)

For the salad:
1 – 1 1/2 heads of romaine lettuce, chopped
1/4 cup bacon bits
1/3 cup dried cranberries
1/2 to 3/4 cup chopped red apple
1/2 to 3/4 cup cherry tomatoes, cut in half
1/4 cup pine nuts
1/3 cup grated cheddar cheese

For the dressing:
1 cup vegetable oil
1 cup sugar
1/2 cup apple cider vinegar
1 Tbsp. soy sauce
salt and pepper to taste
(adapted from the Sweet and Sour dressing recipe from one of my faaaaavorite cookbooks: Come On In)

>> WHAT YOU’LL DO <<

– Put all dressing ingredients in a blender and mix well OR shake them all in a large mason jar.
– In a large bowl, arrange salad ingredients how you wish. Feel free to pre-toss or keep things separate (for the sake of the picky eaters who don’t like certain things!)
– Most importantly… ENJOY!
