I think I have a new favorite appetizer/snack recipe to add to the food file!
I was in charge of making a healthy dip for a shower a few weeks back, and after looking at like 100 recipes, I decided I’d just make my own, using bits and pieces of what I’d seen in my scouring.
I was pretty excited about how this turned out the first time, and luckily I was able to recreate it while taking measurements so I could share it with you! It’s pretty easy, healthy, and downright YUMMY!
>> What you’ll need <<
2 15-oz cans of seasoned black beans, drained thoroughly
1 10-oz can of rotel tomatoes with chilies, drained thoroughly
1 cup diced tomatoes
2 stalks of green onion, chopped
1/2 bunch of cilantro, chopped
3 Tbl. olive oil
1 cup shredded mozzarella cheese
1 Tsp. red pepper
1/2 Tsp. kosher salt
1/2 Tsp. black pepper

Simply mix all of the ingredients together in a large bowl! Transfer into a pretty bowl and serve with crackers or tortilla chips. This dip is good chilled or at room temp. Just refrigerate any leftovers! Enjoy, my friends!
