It was yesterday at about 3:00 in the afternoon. My puny lunch had worn off. I was looking for a healthy snack that would fill me up, but I wanted something with a little bit of a sweet kick to it. After brainstorming/staring blankly into the refrigerator with the door wide open for longer than I care to admit, an idea hit me!
I had plenty of Fage (greek yogurt) and plenty of freshly purchased jazz apples.
One serving of greek yogurt, a cut up apple, a small handful of steel cut oats, and a sprinkliing of stevia, pumpkin pie spices and cinnamon later, this crazy tasty (and healthy!) snack was born.
The protein from the yogurt and the fiber from the apple kept me full for the next several hours, and the stevia and spices added so much fall flavor without adding one single calorie! Although I’m not exactly sure the health benefit of steel cut oats, I know two of my favorite Hollywood cuties (Guliana Rancic and Kourtney Kardash) swear by ’em! Plus they add a nice little texture to the mix. Reason enough for me!
As simple as this is, It seriously was one of my favorite snacks I’ve had recently. It had such a great flavor! (Oh, and before I forget– Be sure to stir everything up so all the flavors get evenly distributed. You’ll have yourself a guiltless seasonal snack and a full little tummy!)
