Happy Friday, friends!

I’m SUPER excited about today’s post because it involves an extra cool liquor that I am so glad to now have in my cocktail arsenal! Have you ever heard of Plantation Pineapple Rum? It’s a delightful dark rum with not only a beautiful label (y’all know I’m all about the packaging!), but it is a gold medal winner when it comes to the rum world. Like, it’s won awards and stuff. And I can completely see why!

I’m not going to give too much away, but I highly recommend going to get yourself a bottle because, taste wise, it’s incredible. Pineapple is where it’s at! But the history I learned from reading the stories printed on the label were so much fun! Charles Dickens fans, this is a must. You’ll see why! History of Mixology fans, this is a must. You’ll see why! General fans of rum, this is a must! I promise.

I’ve spent this week working on a fun cocktail recipe involving this rum, but I’m sure I’ll have more to share in the near future! I love experimenting with mixing and cocktails, and this rum is especially fun.

So the name of this cocktail may become a bit clearer once you obtain a bottle of this stuff for yourself and read the story behind it, but here is my first concoction involving this happy spirit…

The West Indian Daiquiri

>> WHAT YOU NEED <<

1 1/2 ounces Plantation Pineapple Rum
3/4 ounces fresh lime juice
1 ounce fresh pineapple juice
1/4 ounce simple syrup
(( Don’t forget about the measurement cheat sheet at the end of this post that turns ounces into things like cups/tablespoons! ))

>> WHAT YOU DO <<

Combine all ingredients with ice into a shaker and give it all a good shake. Strain into a coupe glass and serve immediately. Garnish with a pineapple and ENJOY!
