It all started when I over bought on fruit. I could tell those apples and strawberries were about to go bad…

Since I have a major sweet tooth (which really seems to make a strong appearance when I’m trying to eat better… of course…), I decided to use these fruits to make a dessert that I like to call Apple Berry Crisp! Since the original making last week, I’ve made this dessert 4 or 5 times! Sometimes, I cut the recipe in half and keep it all myself, but I’ve been known to make a full recipe and share it with others, too… 😉

I don’t feel bad AT ALL about eating this Apple Berry Crisp because it’s super healthy! It’s not quiiiiite as good as mama’s apple crisp recipe, but that’s because this one is sans butter and sugar! 🙂

But that doesn’t mean it isn’t good!

Here’s what you need-

For the fruit part:

4 apples, cut into small(ish) pieces
heaping 1/2 cup of whole blueberries
heaping 1/2 cup of strawberries, cut up

For the topping:

1/4 cup almond flour (I’ve also used food processed pecans- equally as good!)
2 tsp. cinnamon
1/2 cup old fashioned oats
2 Tbl. coconut oil (do not melt!)
1/4 cup stevia in the raw

Preheat the oven to 350.

Put all of the topping ingredients into a bowl and use a fork to work it all together until it reaches an almost sandy consistency. Because the coconut oil is still solid, this can take a minute! It should look something like this:

Set the topping aside.

Mix all of the fruit together and transfer it to a 9″ x 9″ baking dish. (I love our le creuset stoneware!! How CUTE is that blush color?!)

Pour the topping over the fruit evenly.

Bake for 20-25 minutes (depending on how “done” you like your apples!)

Serve it warm by itself or with ice cream if you’re not on a diet! 😉

Completely unrelated to Apple Berry Crisp, but 100% related to why it’s been over a week since my last post… In honor of precious Ryan LaSource, please take some time TODAY to love on your kids, your spouse, your parents, your siblings, your friends… Whoever means something to you. Life is so short!! Ryan’s tough fight, his strong spirit, and the faith of his incredible parents have really caused me to take a deeper look at what’s important. So I’ve been really trying to make a point to show those close to me how much they mean to me.  My house may be dirty and my blog may not be as well updated, but I have loved the mess out of my family these past few days. 🙂

Many thanks to the LaSource family for keeping their faith SO strong during such a hard time. It’s incredibly inspiring. Life changing, actually 🙂

    This is EVERY BIT AS TASTY OR MAYBE EVEN BETTER than the ol’ Apple Crisp out of the Betty Crocker cookbook!
