Cheesecake Parfait

The more pregnant I become, the hungrier I become.

It is what it is!

But since I’ve been trying (during the week at least) to eat healthier this pregnancy, I’m always on the lookout for a healthy (and of course tasty) snack!

Somehow the idea for this Cheesecake Parfait popped into my mind and I’ve been making it for about a month now, tweaking it a little bit each time trying to get it juuuust right!

Pregnant or not, I think this is going to be one that I keep in my regular snack rotation for a while because…

…. I feel like I’m eating cheesecake without having put in the effort to actually make a cheesecake…

… It’s a pretty clean/all natural recipe…

… It’s easy and extras store well…

… It’s got a lot of protein and hardly anything bad about it!

>> WHAT YOU NEED <<
Makes 2 servings

About 1 cup of sliced fresh fruit of your choosing

for the cheesecake part
3 oz. of neufchâtel cheese/reduced fat cream cheese, softened
6 packets of stevia
1 cup 0% greek yogurt
1/2 teaspoon vanilla extract
1/2 teaspoon salt

for the “crust”
2 tablespoons graham cracker crumbs
2 tablespoons almond flour/ground up almonds

>> WHAT YOU DO <<

1. Combine all of the ingredients for the cheesecake part in a medium bowl and mix until well combined and set aside.

2. In a separate smaller bowl, combine the graham cracker crumbs and almond flour to make the “crust” layers of your parfait!

3. Grab two of your favorite glasses (each able to hold at least 8 oz!) and divide your fruit evenly between the two for your first layer.

4. Spoon about a tablespoon of “crust” into each glass on top of the fruit for your next layer.

5. Divide the cheesecake layer evenly between the two glasses for your third layer.

6. Use the remaining “crust” to evenly top the two servings!

7. Get two spoons and a friend and dig in! (Or you can save the second serving for tomorrow. Since this type of snack isn’t really up Price’s alley, I almost always end up eating the second serving the next day!)

As far as nutrition, I don’t feel bad at all about eating this snack! It feels like I’m cheating but really I’m not! For the cheesecake and crust layers, you’re looking at about 235 calories, 17 grams of protein, and 7 grams of sugar per serving. Of course, once you factor in your fruit, that changes a little bit!

I hope you like this as much as I do if you try it! As Donkey from Shrek says, “Parfaits are delicious!”
