Over the weekend, I got a hankering for something mexican, but didn’t really want to go anywhere (plus we have a ton of groceries on hand right now for some reason.)
I pillaged through our pantry and our fridge until I found ingredients to make a mexican pizza!
Does anyone else remember those things from Taco Bell’s days of yore? They actually may still have them on the menu, but I cannot tell you when the last time was that I ate Taco Bell!
Anyway, I used to loooove a mexican pizza. It was two tortillas with beans between them as the crust of the pizza with all sorts of goodness piled on top of it! I created my own version and I gotta tell you… It was awesome… I’ll definitely be making this bad boy again! This recipe is extremely approximate, left up to you to put as much or as little of each topping as you want!
WHAT YOU NEED
2 tortillas (I used whole wheat + extra fiber ones!)
about a half a cup of mashed black beans (or refried beans would work too!)
dollop of sour cream (or plain greek yogurt if you think they taste close enough like I do!)
sliced black olives
cut up green onions
sour cream (or plain greek yogurt)
WHAT YOU DO
Preheat oven to 300.
Take one tortilla and place it on a baking sheet, then spread your beans out on it and top it with the other tortilla.
Use a dollop or two of sour cream/greek yogurt as your pizza sauce. Spread it all around on the top tortilla.
Add your toppings! I saved the cilantro and greek yogurt as post oven toppings.
I stuck my mexican pizza in the oven for about 5 minutes, but you will want to keep an eye on yours and just pull it out once it looks like things have melted/browned up to your liking!
Cut in 4 quadrants and ENJOY!
(This was more than I could eat for one meal so I made the leftovers into a snack and it was just as good cold the next day as it was hot the first day!)
