Taco Night!

A week or so ago, Price and I had one fantabulous supper!!

We made beef tacos and they. were. legit
The main reasons they were so good were:

(1) Corn tortillas. They have so much more flavor than flour tortillas! I cannot put into words how much I love corn tortillas….
(2) Fresh cilantro. The flavor of fresh cilantro is quite possibly one of my favorite flavors in the whole world!!
(3) The meat was exxxtra good! I cooked it on the crock pot all day so it was juicy and tender when we got home.

Here’s what we used to prepare the beef. This was enough to have some leftovers!

1 pound of ground beef
1 pack of taco seasoning
1 pack of ranch seasoning
1 cup chicken broth
salt and pepper to taste

Throw all of this into the crock pot and set on low so it can cook all day. Be sure to take a spatula and start separating the beef as much as you can. Add just enough water to where the meat is about 3/4 covered with liquid. When you get home from work, take a spatula again and separate the ground beef some more.

Get all your fixins ready while the meat is soaking up some of the delicious juices floating around in the crock pot! We had the corn tortillas, slightly warmed in the microwave, fresh cilantro, guacamole, grated cheese, tomatoes, onions, and a sauce I made by mixing greek yogurt, a little milk, and ranch seasoning. But you can use whatever you like! The great thing about tacos is they are super customizable!!

We each fixed our tacos to taste and had some baked sweet potato fries seasoned with Who Dat Seasoning (which we LOVE!! It was created by the owner of the Jackson location of Logan Farms!) to go alongside the main course. This seriously was such a good meal– and so simple!! Pretty healthy, too! 🙂
