I hope all of you had as lovely of a weekend as I did! I went to Starkville for Super Bulldog Weekend and had a total blast! We went to a baseball game, ate some great local food, went to my fave Starkville coffee shop (twice in one day…), hung out with friends, and got some shopping done, among other things!
When I got home yesterday, I remembered I needed to make something for Neighbor Night tonight! (Remember when I told you about the inaugural one here? Well, it stuck and now we’re having another! So excited!) I made a recipe I’ve had in my head for a little while now, and it actually turned out pretty good! So I wanted to share…
It’s for a slightly healthier version of pimento cheese! I used Greek yogurt in place of mayo and used low fat mozz instead of cheddar!
WHITE PIMENTO CHEESE
>> What you’ll need <<
1/3 cup + 2 tbsp plain 0% greek yogurt
2 cups shredded reduced fat mozzarella cheese
2 oz. diced pimento, drained
1 tsp kosher salt
1 tsp red pepper flakes
>> What you’ll do <<
Mix all ingredients together in a medium bowl. Transfer to a decorative bowl and chill until time to serve!
Serve it as a dip, put it on a sandwich, or do whatever you do with regular pimento cheese! Hope you enjoy! 🙂
