Frozen Margarita Pie with a Pretzel Crust

A few weeks ago for supper club, which was Mexican themed, I was in charge of dessert, so I was on the hunt for something that would fit the theme but that people would still be excited about. (Mexican food isn’t really known for it’s delicious desserts like, say, French!)

One day at work, I heard one coworker thank another coworker for the Margarita Pie recipe she shared with him a few days prior! It was then and there that I knew that this was the dessert I had to made for supper club!

Here’s the recipe:

FROZEN MARGARITA PIE
Serves 8

1 1/2 cups pretzels, finely crushed (Be sure to measure out, then crush.)
1 cup sugar
1/2 cup (1 stick) unsalted butter, melted
zest of 1 medium lime
1/2 cup fresh lime juice
14 ounces sweetened condensed milk
2 tablespoons gold tequila
2 tablespoons triple sec
1 1/2 cups fresh whipped cream, divided
2 drops green food coloring (optional)
12 whole pretzels

This recipe requires advance preparation.

Butter a 9-inch pie plate. Combine the crushed pretzels, sugar, and butter in a medium bowl. Mix together well and press into the prepared pie plate. Chill the crust for 1 hour. Combine the lime zest, lime juice, sweetened condensed milk, tequila, and triple sec in a medium bowl. Fold in one cup of the whipped cream and the food coloring. (I only did one drop of food coloring instead of two.) Pour the mixture into the prepared crust. Cover and freeze for at least 4 hours. Decorate the pie with the remaining 1/2 cup of whipped cream (I ended up mixing just a little more triple sec with this part of the whipped cream! It was great!) and the whole pretzels. Serve cold. Store in the freezer.

I think my favorite thing about this pie was the pretzel crust. It was just the perfect bit of saltiness to go with the sweet tartness of the filling!
