County Seat Chef’s Table

A couple of weeks ago, Price and I (with Wilson in tow!) had the pleasure of attending the Chef’s Table at County Seat, a brand new restaurant out at The Town of Livingston.

I have been excited about this restaurant ever since I heart about it at the Livingston Farmers Market a year ago! The chef who opened it, Jeremy Enfinger, has been a friend for a couple of years now and I’ve ALWAYS admired his skills! This guy is the real deal! (And so nice on top of being ultra talented!)

Since the Chef’s Table took place on May 5th, the “garden to bar” drink for the evening was a special margarita and it was wonderful! I’m a huge marg fan!

Everything else we got to try was outstanding as well! Since I’m not the biggest seafood fan — I wish I was! — I didn’t try the tuna, but everything else that I sampled was simply outstanding! And we got to sample a LOT off the summer menu!

The thing that really sets County Seat apart is the way they do their meats. Since Livingston was the county seat of Madison back in the 1800s, Jeremy is using meat prep styles from that era! Lots of smoking and pickling. I thought that was super neat!

Overall, Jeremy said he doesn’t want anyone to be afraid of County Seat’s menu. He wants his food to be very approachable! It’s just good food done really well, with as many locally sourced ingredients as possible. He’ll put a creative twist on things to make them a little different, but never intimidating! I can appreciate that. (And my husband really appreciates that!)

Don’t say I didn’t warn you about getting hungry! And I’m not even finished!!

After our most perfect dinner at County Seat, we were invited to walk across the street to the brand new Livingston Sweet Shoppe for dessert! They’ve got all sorts of old school candy, snow cones, popcorn, ice cream… SO many good things for a sweets lover!

I had some praline ice cream in a pretzel cone for my dessert (as if I had room…. I didn’t… But made some anyway…) and it was astounding! I’ve seriously thought about it every day since I had it. I think that’s some sort of a sign!
