Hey! Happy Monday! I hope your weekend was the best! We had a fun one in Ruston, LA celebrating the marriage of Price’s cousin Madison and her beau Daniel!

So lately (this weekend didn’t really count because we were out of town and eating on the go a lot), Price and I have been doing a modified version of the Abs Diet. In a nutshell, there are 12 power foods, two of which you’re supposed to incorporate into 6 meals/snacks a day.

One of my favorite snacks has become a greek yogurt, berry, and granola parfait! Low fat dairy, berries, and oatmeal are all power foods so that snack actually incorporates three! Woo!

Anyway, most store-bought granola is super sugary and just not all that good for you. So I’ve come up with my own that I’ve been using to layer into my parfaits and I really love it!

It is really easy and way healthier than what you’d buy. And it’s no bake!!!

Here’s what you need:

1/2 cup oatmeal

1/4 cup craisins (or just regular raisins would be good!)

1 Tbl. virgin coconut oil, melted

1 Tbl. honey

a few taps of cinnamon, to taste

a pinch of salt, to taste. (I do a generous pinch because I love that sweet/salty yumminess)

1/2 Tbl. stevia (optional if you want it a little sweeter)

Here’s what you do:

I put all of the dry ingredients into a mason jar, then add the honey and coconut oil in. I put the top on the mason jar and shake shake shake! You’ll probably have to get a fork and break up a few clumps then shake some more! But once you’ve it it big lump free (small lumps are ok in my book!) then stick it in the fridge for a little while to allow the flavors to really set.

I keep it stored in the fridge and sprinkle however much I need onto my parfaits! It adds so much great flavor and texture to my parfaits!

There are lots of ways you could vary this up. It’d be great with slivered almonds, with raisins, with sunflower seeds… You can totally make it your own!
