Since the beginning of this month, it seems like Pumpkin Spice Lattes have taken over the world! On a regular basis, I am more a fan of simple (translate: black) coffee, probably because I’m semi-lazy and don’t want the calories. But sometimes something a little more exciting does sound appealing! Because I do love fall flavors, but I don’t love a cup filled with a bunch of extra empty calories, I came up with a fall-spiced creamer to add to my regular cup of black when I’m in the mood for an autumn pick-me-up!
This concentrated little mixture adds lots of flavor without adding too much sweetness to your morning routine, and it is just enough to make me feel like I’m indulging without having to pay the high-calorie price!
Here’s what I’ve been mixing up about once a week to add to my coffee when I’m in the pumpkin spice mood!
LOW-CAL PUMPKIN SPICE COFFEE CREAMER
3/4 cup unsweetened almond milk
(you can also use skim milk, but I personally prefer almond!)
1/2 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
2 1/2 tablespoons stevia
1/2 teaspoon vanilla extract
I combine all of these ingredients in a mason jar, shake things up real well, then add just a smidge to my hot coffee!
(This recipe can easily be doubled if you think you’ll want more than just a little bit in each cup! It’s still low calorie!)
The extra can be stored in the fridge 🙂
