You might remember me talking a couple of weeks ago about our recent experience with Whole 30! There was so much I liked about the program, but overall, it was exhausting for me! (You can read more about why here!)

My favorite part of the program was how great I felt after eating super clean foods for 30 days. It was a fantastic feeling! So since we stopped doing Whole 30 day in and day out, I’ve still tried to continue eating “whole” as much as I can! Enter my favorite salad 🙂

This salad is hearty enough to be a meal all on its own, and is packed with unique flavors that make it anything but boring! It is really easy to vary up, too, so that’s a bonus!

So here’s what all is in this salad:

A bed of lettuce/greens of your choosing

One apple, chopped up

Bacon bits (made from the lower sodium bacon at Kroger– it’s W30 approved!)

Walnuts

One avocado, cut up

Salt and pepper to taste

Pomegranate Dressing (made with two parts olive oil, two parts Pom juice, and one part Apple Cider Vinegar. With salt and pepper to taste.)

The particular day that I made and ate this salad, I was out of chicken or turkey, but either of those are great additions as well! The pomegranate dressing adds just the right amount of tang to the salad, I think, and thankfully a little bit of 100% juice is allowed on W30! I imagine this would also be really good with maybe some blue cheese or goat cheese, too. But of course those are not allowed on Whole 30!

    This salad looks sooooo good (minus the walnuts, cause I am allergic to nuts). I am always looking for new things to make for lunch.
